Set food-cost targets
Use Business defaults, Store overrides, and Product-specific targets in the correct priority order.
Overview
- The Business has a default Target food cost percentage.
- Each Store can optionally override the Business default.
- A Recipe-linked Product can optionally have its own target.
- Effective priority is Product target → Store override → Business default.
- Leaving a Store override blank makes that Store inherit the Business default.
- Targets are comparison thresholds; changing a target does not change the Recipe cost or selling price.
When to use this
- Use a Store override when operating economics differ by location, and a Product target when one item intentionally needs a different target from the rest of the Store.
Step-by-step
- Open Costing → Settings.
- Set the Business default between 0 and 100%.
- Add Store overrides only where needed.
- Set Product-specific targets from Product costing/menu settings where justified.
- Review Dashboard/Product Costs to see which source supplies the effective target.
Common mistakes
- Do not change the target to make an expensive Product appear healthy; targets are management goals, not cost inputs.
- Do not forget a Product-specific target overrides Store and Business targets.
- Do not set a Product target when no Recipe is linked.
Troubleshooting
- If a target seems wrong, check the displayed source: Product, Store, or Business.
- If a Store should inherit again, clear its override rather than copying the Business value manually.
